Kentaro Nishibuchi
Born in Kyoto Prefecture. After learning the basics of Chinese cuisine for 6 years at Chinese restaurant "Kakan" in Kyoto Brighton Hotel, he trained at Kappo restaurant "Gion Sasaki" in Kyoto for 5 years. 2013, he opened "Nishibuchi Restaurant" near Yasaka Shrine in Higashiyama, Kyoto. He fuses the delicate flavors of Chinese cuisine, which is the origin of his own cooking, and Japanese cuisine, which he cultivated through Kyoto cuisine, to create modern Kyoto-style Chinese cuisine.
